Green chile is perhaps the defining ingredient of New Mexican food compared to neighboring styles. In the past few years, green chile has grown increasingly popular outside of the state of New Mexico, and can be found on everything from enchiladas to burgers and bagels.

You will dine at The Pink Adobe restaurant, which was established in 1944 by Rosalea Murphy. Known affectionately by locals as "The Pink," the restaurant has grown into a local and national landmark. The Pink is located in the center of the historic Barrio de Analco across the street from the San Miguel Mission, which is considered the oldest church in the United States.
