Mexican Home Cooking

The focus of “Mexican Home Cooking School” is a classic gourmet cuisine; well beyond what is usually understood to be Mexican food. The marriage of three kitchens: Spanish, French and Indigenous has created a cuisine as intriguing and complex as Mexico’s baroque heritage.

Sauces are key to the dishes of Mexican Home Cooking. Though made from seemingly simple ingredients, their success lies in carefully building flavors to achieve a multi-layered taste experience that is at once delicate and intense - a tapestry of flavors that combine native and European influences. With our guidance you will be able to recreate their delicate secrets.

Your instructor, Chef Doña Estela will teach you to prepare the family recipes passed down to her by her grandmother, Chef Doña Eulogia Silva Castillo, from the city of Puebla. You will learn how the marriage of three kitchens: Spanish, French and Indigenous has created a cuisine as intriguing and complex as Mexico’s own baroque heritage.

Señora Estela Salas Silva began a classical culinary apprenticeship at the age of seven under the tutelage of her grandmother and the women of her family, according to the traditions of Mexico that still existed at that time. Her experience in restaurants began at age 9 in Mexico City and continued to San Francisco, where she was Head Chef of her family’s “El Rebozo Restaurant” for many years. She has owned and operated Mexican Home Cooking School since 1996.

Spend your morning in class preparing a sumptuous mid-day meal. Then enjoy the fruits of your labor. Relax a little afterwards or take a short siesta, and then it's off to do some exploring in Colonial Mexico. In the evening, return for cocktails and a gourmet dinner.

Culinary Vacation Highlights:

  • Hands-on Participation
  • For five days you will spend approximately 2 hours per day in the kitchen learning to prepare recipes
  • You will see demonstrations, techniques, and the use of ingredients
  • Classes are usually limited to 4, maximum of 6
  • Healthy eating is the emphasis of all selected recipes and ingredients
  • Visit public market to shop for the freshest of ingredients
  • You will learn to prepare regional traditional favorites such as Mole Poblano and Chiles en Nogada, along with lesser-known exotic dishes
  • Recipes of special interest can be covered on request
  • Longer or shorter courses as well as reserved private lessons can be arranged
  • We are open year-round, and have no minimum group size
