The Hunter Valley Resort is located in the very heart of the Hunter Valley Wine Country on 70 secluded acres, and is an easy 2 hours drive north of Sydney.
The resort offers the complete Wine Country Experience. Nowhere in Australia is there a family owned lodge being operated and marketed as one facility with an all day restaurant offering fabulous food, 4½ star accommodations, and their own great wines from the Wine Tasting Cellars, also the Hunter Valley's largest winery where guests can see how the wine is made. All nestled within its own 38 year old vineyards.
Hunter Valley Resort is owned and managed by the Helé family. Brother/Sister team – Karina Barry and Philip Helé saw the tremendous opportunity and in August 1991 purchased the freehold property. Philip is ex-Regent of Sydney and Clemenger Advertising. Karina did her training with The Regent of Sydney, The Savoy in London, and finally in the kitchens of Neil Perry’s famous Rockpool Restaurant in Sydney. Brian (Karina’s husband) joined the business in 1998 and looks after all of the resort’s wine activities.
The on site winery is by far the largest, and most advanced in the Hunter Valley. The Wine Tasting Cellars are open everyday to try the fruits of their labor... Crushing some 6.500 tons of grapes each year, the winery produces around 6 million liters of wine. Not to be missed is the daily comprehensive winery tour to experience how wine is actually made...right from the grapevine to bottle!

Culinary Vacation Highlights:
- Join Karina Barry who worked as a chef at The Savoy in London and Rockpool in Sydney, andn her husband Brian Barry who is a Wine Educator with 25 years experience in the Wine Industry
- We take you on a visit to the Binnorie Cheese Factory where you will experience a private tasting. Then it is back to our purpose built Cooking School Kitchen with library and wine cellar attached
- This is a hands-on class and all dishes are cooked from scratch using local organic produce. Recipes are provided and the dishes cooked are eaten for lunch
- The lunch usually consists of a three-course lunch with an additional course of Binnorie Cheese
- Tour of the Winery and tutorial with Brian Barry
- Accommodations and breakfast each morning
