Our culinary spirit keeps us on the cutting-edge of all things food and inspires us to constantly evolve our menus with the seasons and current cooking trends. Select from our wide array of exciting classes covering subjects such as ethnic cuisines, basic techniques of cooking, baking, and fantastic holiday entertaining ideas...whatever you choose, we'll make sure you have a blast!!!
Our Culinary Program offers a variety of subjects for everyone and at times that are convenient for you. Whether you like to get your hands dirty or sit back and let us do the work; and whether you want to learn about pizzas or pasta, ethnic cuisines or backyard grilling, we have the class that's right for you.
Spend a few hours or even a few days with us. In our single-subject classes you'll learn new skills in just 2 to 3 hours that will last a lifetime. Or, enroll in one of our series classes and make new friends as you meet regularly to delve further into the topics as the series progresses.
Hands-On Workshops –
Our hands-on classes give you an opportunity to get your hands dirty. Working closely with an instructor and using the finest Viking professional appliances, cookware and cutlery, you and a small group of classmates learn cooking techniques by actually preparing the menu items.
Demonstrations –
In our demonstration classes, students learn by watching the instructor prepare the menu while providing step-by-step procedures for each dish. This relaxed, interactive format encourages informative discussions to help you prepare the dishes with confidence at home.
Kids & Teens –
Cooking is cool at the Viking Cooking School where we encourage young aspiring cooks to learn in classes designed especially for them. If your child is gastronomically inclined and looking for a fun, creative outlet, share the joy of cooking with them. In some classes even the adults join in the fun for a unique bonding experience. In addition to learning age-appropriate cooking skills, kids and teens will develop important life skills such as working as a team, applying math and science, and developing creativity through cooking. Open up a whole new world for your child as they pursue their passion for cooking under the guidance of our skilled instructors.
Recipe

MAPLE SYRUP CEDAR PLANK SALMON
Serves: 4
Ingredients:
Cedar plank, soaked in water for at least 30 minutes
1 Bunch whole green onions
1 Bunch fresh dill
4 Sprigs of thyme
1 Two pound center-cut salmon, skin on
Kosher or sea salt
Freshly ground pepper
½ Cup maple syrup
2 Teaspoons Dijon mustard
1 Fresh lemon, sliced
1 Fresh orange, sliced
Directions:
Secure a 1-inch thick, untreated cedar plank. For this recipe, you may want to use a longer plank that is about 18 inches to 2 feet.
Preheat oven to 350 degrees. Line the plank with a layer of the fresh herbs and green onions. Sprinkle the salmon generously with salt and pepper. In a small bowl, stir together maple syrup and mustard until well blended, then brush onto the fish. Place the salmon skin-side down onto the prepared plank. Cover the salmon with sliced oranges and lemons.
Place the plank on a large baking sheet in order to catch the juices. Bake until the center flakes easily with the tip of a fork, but is still slightly pink. A good rule is about 10 minutes for every inch of thickness of the fish.
