Culinary Craft Classes
Students will use the finest ingredients available while training their palates and refining their cooking skills. The "Cooking Craft" classes will focus on Miami's diverse styles of cooking and embrace the various ingredients and cultures represented. Participants will explore the basics and techniques of cooking as well as some of the most innovative trends from popular sauces to mastering the flavors of Cuban, Caribbean, Latin, South East Asian and Mediterranean- which are all wrapped up into our featured Palm Tree Cuisine.
Interactive, hands on cooking classes will be taught in the kitchen at Chef Allen's. Classes will feature Chef Allen's Palm Tree cuisine in addition to a series of back to the basics cooking techniques. Each class will include three segments: a brief lecture, cooking and eating. "Culinary Craft" Classes are generally scheduled for the 1st Thursday of the month from 10 a.m. - 1p.m. Please check the calendar for details.
Lunch and Learn
Classes are designed for groups of 15-50 people. These demonstrations encourage discussion on various topics related to the actual classes. Several approaches to cooking style and ease are explored. A three-course lunch with wine is served. Each student will receive a personally autographed copy of either of Chef Allen’s cookbooks – “The Great Mango Book” or “The Great Citrus Book”.
Passion For Food
This is an exotic foods class for 20 - 50 students. It is a great class for entertaining food lovers. The format includes interactive demonstrations and tastings of both foods and wines. Topics for that day are your choice.
Included in each class are hints and shortcuts in cooking, clear and easy tips for shopping and handling new and exotic flavors, as well as entertaining and wine pairing. Class and tasting are 1 1/2 hours inclusive. This class may be scheduled day or evening.
Hands On Cooking
A customized cooking class for 3-5 students during the daytime hours. It will take place in the actual kitchen of the restaurant. Students learn to chop, dice, whisk and cook their way through the recipes of the day. Along with Chef Allen providing experienced hands and guidance, the work for the individuals is simple and exciting. After the preparation is complete, students may enjoy the fruits of their labor along with matching wines.
The Serious Cook
This is an individual "hands on" cooking class that illustrates the building blocks of great cooking. For the novice cook or fledging gourmet, we will guide you through the principles of fundamental cooking methods that you can depend on for a lifetime. The concepts and professional techniques learned will not only improve your cooking skills, but also strengthen your confidence, creativity and imagination.
The day begins with a discussion of food and culinary philosophy with Chef Allen. Then you will proceed to the kitchen for a full day of hands on instruction and participation in restaurant activities that are tailored to your personal interests. Each session starts at 3:00 and goes through the evening for 4-5 hours.
