While cheese making is theoretically a science, you also need to appreciate that it is just as much an art. Cheese making may appear simple, but there are skills and sensitivities which must be developed in order to successfully create homemade cheeses. The same is true with sausage and salamis. Creating the right mix of seasonings that balance the meats can make the difference between serving a charcuterie platter or a mediocre appetizer. In this two-day Apprentice workshop, you will learn the secrets of your chosen discipline in a way that allows you to reproduce the “art” when you return back home.

Choose an artisan class on either cheese making or salami/sausage making. Both classes will begin on day one with a visit to either a dairy farm or a ranch where we will see where the products we are going to produce come from. You may take a guided tour of Bellwether Farms for the cheese making class or Hudson Ranch for the salami/sausage class. On day two we will spend the day preparing either cheese or salami and sausage and making dishes utilizing the products. In the cheese making class, participants will receive a home cheese making starter kit to take home and in both classes the participants receive a booklet with recipes and techniques.
