Learning how to cook Italian food is a secret dream for many people. During this cooking holiday you will have the opportunity to learn the recipes of traditional Italian and Abruzzese cuisine, from homemade pasta and gnocchi to desserts and other culinary delights. These dishes come from the oldest and most authentic recipes handed down from family to family. Special attention is given to territorial and seasonal foods like fresh local vegetables, fish and fruit, but also to the produce you can find in your local market when you get back home. You will have the opportunity to visit the traditional fishing huts called Trabocco constructed along the coastline. You'll hear the silence of Old Abruzzi, you will get lost among its colors and you will remember its flavors for years to come. Day 1
Round-Trip Airport Transfers | Welcome Dinner You will be greeted at the Rome International Airport, then traverse the Apennine Mountains as you journey through Lazio and Abruzzo on your way to the Residenza Sveva that resides within the walled, medieval enclave of Termoli. After you have settled in, you will all meet a briefing of this week’s itinerary. A welcome dinner will follow, where you will enjoy a multi-course meal in this historic village by the sea. This tour is designed as a full-immersion culinary adventure that is sure to create memories that will last a lifetime.
Day 2
Breakfast, Lunch and Dinner Today, you'll enjoy a full Italian breakfast buffet, lunch with wine and dinner with wine. Your time in Italy will be filled with exciting excursions and activities, with the tastes of this region being a highlight of your stay.
Olive Mill Tour | Visit to San Martino Village Your morning will start with a delicious Italian breakfast, after which you will head out for a visit to a historical, award-winning olive oil estate, owned by the same family for over 200 years. Here, you will learn about sampling techniques and taste a variety of olive oils of every scent and flavor, such as citrus oils and infused oils. The estate produces extra virgin olive oil from 18,000 olive trees, using a wide range of varieties typically found in Molise and southern-central Italy. You will walk through the olive grove, learn how olives are picked, and then see how they are processed into real extra virgin cold press olive oil. After this incredible experience, you will head to San Martino village, and then back to Termoli. After some time to relax, you will gather with your new friends and sit down to a delicious Italian dinner.
Day 3
Breakfast and Lunch Today, you'll enjoy a full Italian breakfast buffet and lunch with wine. Dinner will be on your own at your leisure. Your time in Italy will be filled with exciting excursions and activities, with the tastes of this region being a highlight of your stay.
Hands-On Pasta Cooking Class | Tour of Termoli After breakfast, you will learn how exciting making pasta, in a variety of colors and shapes can be. You’ll be lead by expert cooks from the village, who will teach you all the tricks to having your pasta turn out perfect each time. The type of pasta you make in this lesson will be dependent upon seasonal availability, ensuring that the freshest ingredients are used in the preparation of the chosen pasta dish. After a delicious pasta lunch and a short break, it’s time for a tour to discover the history, places, and people of Termoli. The Old Town is a genuine walled community jutting out into the sea. Many of the houses have been re-built and painted in a range of pastel colors. In a central square there is the cathedral (12th-13th century), dedicated to St. Mary of the Purification: it is a noteworthy example of Apulian Romanesque architecture which houses the relics of the two city's patron saints, Bassus of Lucera (San Basso) and Timoteus (Timothy).
Day 4
Breakfast and Lunch Today, you'll enjoy a full Italian breakfast buffet and lunch with wine. Dinner will be on your own at your leisure. Your time in Italy will be filled with exciting excursions and activities, with the tastes of this region being a highlight of your stay.
Agnone | Cheese Maker | Bell Foundry | Pizza Making Class Get set for another excursion filled day. After breakfast, you will head to Agnone village, where you can watch old-world production of mozzarella, ricotta and caciocavallo cheeses, then have the chance to make your own “primosale” cheese. This award-winning, family business, has been producing cheese since 1662, with 11 generations of cheese makers. They are renowned for their high quality cheese, especially the Caciocavallo, which is a gourmet version of provolone. Lunch will be cheese tasting, where you'll be joined by the cheese makers themselves. After lunch, you'll visit a historic artisan bell foundry, where you will learn about each phase of manufacturing these unique bells which are created for Vatican City and sold all over the world. On the way back to Termoli, you'll visit Canneto, a very charming melieu along the Trigno river. Once back in Termoli, you'll have some time to relax before beginning your next cooking class. You will learn how to make pizza with a variety of vegetables, meats and cheeses, in the authentic Italian way. A real “pizzaiolo” will guide you through the art of pizza making. Here, you'll learn that while there are many different sauces and ingredients that make up the perfect pie, the dough is the heart and soul of this Italian staple. Tonight, you are free to explore and enjoy dinner on your own.
Day 5
Breakfast, Lunch and Dinner Today, you'll enjoy a full Italian breakfast buffet, lunch with wine and dinner with wine. Your time in Italy will be filled with exciting excursions and activities, with the tastes of this region being a highlight of your stay.
Peasant Food Class | Afternoon for Hiking or Optional Activities You'll start your day with a visit to a fish and vegetables market in town, then head back to the kitchen for your next cooking class. You will learn about some of the most delicious peasant food recipes of the old world, which are now considered some of the tastiest Italian recipes. You will create an appetizer that highlights the local produce, a vegetable based main course, and a delightful dessert. The theme for this class is quick and healthy homemade recipes and techniques you will be able to recreate at home. Everyone will dine on these tasty creations in traditional Italian style and in good company! The rest of your day is free for you to spend at your leisure.
Day 6
Breakfast, Lunch and Dinner Today, you'll enjoy a full Italian breakfast buffet, lunch with wine and dinner with wine. Your time in Italy will be filled with exciting excursions and activities, with the tastes of this region being a highlight of your stay.
Vasto Excursion | Trabocco Fishing House | Taste of the Adriatic Lunch | Farewell Dinner Enjoy a trip to the Adriatic coast for a guided tour of Vasto and its historical center, shopping, and a sightseeing tour of the coast's unique "Trabocco" fishing houses. Depending on the weather and the season, you may be able to enjoy a fishing experience at the Trabocco, an old fishing house sitting in the middle of the sea – a very special treat. Shoe shopping seems to be a national sport in Italy, and you will find a huge selection in the local boutiques and outlets, along with clothing, jewelry and much more. You will then relax at the best restaurant in town, where you will be served a seafood sampling feast. In the evening, you will have dinner at the Regional Wine shop where you will taste a unique wine produced only in Molise—Tintilia wine from Tintilia grapes, while you bid farewell to Molise.
Day 7
Breakfast You will have one final opportunity to savor the Italian breakfast you have come to cherish. After breakfast, gather up your luggage, souvenirs...and memories. It's time to say Arrivederci!
Check-Out and Departure | Luxury Transfers Back To Rome Time flies when you’re having so much fun, but alas…it is time to check out and depart this delicious, “Edible Destination.” Remember, short excursion packages are often available in nearby cities or historic destinations. Should you desire an extension, please let your culinary travel specialist know prior to check-in. Your host will provide transfers to the airport or train station in accordance with your travel plans. May your future travels come from sweet dreams, and create tasty memories!

What Currency is being quoted?
The Currency Code is listed directly after the published amount. If it states USD, then the quoted price is in United States Dollars. If it states CAD, then the quoted price is in Canadian Dollars. If it states EUR, then the quoted price is in European Union Dollars…etc. However, please note that all charges are processed in USD, and Epitourean’s Merchant Bank automatically calculates the currency conversion on the day of the charge.
What does Double Occupancy mean?
Two persons traveling together, and staying in the same room. Tour prices are normally quoted as “per person, double occupancy” in case two people are traveling together and staying in the same room, but paying separately. The cost of the lodging is also shared by two people, thereby reducing costs. This could be a married couple, two friends or relatives.
What is a Single Supplement?
Whenever a person travels alone, the cost of their lodging cannot be shared by another person. When tour products are priced, they are normally stated as “per person, double occupancy.” Whenever a guest occupies a room as a solo, the whole cost of the lodging must be incurred by that one individual. Tour companies accommodate this by charging a Single Supplement. Epitourean does its best to keep the single supplement as low as possible, but it is a real cost that tour companies must absorb, and must pass along to the single traveler.
If I am a Solo Traveler, will I be paired with another person?
Epitourean never pairs a solo traveler with another person without a special request. If you book Single Occupancy, you will have a room entirely to yourself. However, should you wish to be paired with another solo traveler to save on the single supplement, you may make this request. We cannot guarantee that we can accommodate such requests, since it would take another solo traveling on the same tour for the same dates. But if requested, we will certainly try.
Is a Deposit required to book a tour or getaway?
Yes. We require a 30% refundable deposit for all our domestic (USA and Canada) getaways and tours, and a 50% refundable deposit for international destinations outside of the USA and Canada. Reservations made for destinations within the USA and Canada must be paid in full 30 days prior to departure. Reservations made for destinations outside of the USA and Canada must be paid in full 60 days prior to departure.
Are flights included in the tour price?
No. Flights are never included in the price of our land-only tours. Epitourean does not provide air, rail or sea travel, unless expressly noted in the itinerary.
May I give a culinary tour as a gift?
Yes. Epitourean has a special program designed specifically for this purpose. Our Gift Packages come with features such as special messages to the recipient, gift box option, gift link (without pricing), and floating dates (should you not know when the gift recipient wants to travel). May we request separate beds if sharing a room?
Yes. In most cases, Epitourean can accommodate a request for two beds to be placed in one room. Just make sure to make this request in the comments section of the reservation process.
Does each guestroom have a private bathroom?
Yes. Epitourean partners with the best lodging options in each destination, and private (en suite) bathrooms are a requirement. However, you should inquire as to the configuration of bathrooms should you have a special need. For example, some tours include accommodations in medieval villages, where either a shower or bath(but maybe not both) are present.
Can your tours accommodate my dietary restrictions?
In almost all cases, Epitourean can accommodate dietary choices and restrictions. But we do request that you ask a Culinary Travel Specialist prior to making your reservation so that we can assess your individual situation.
What is your Cancellation Policy?
Our full cancellation policy is stated in the Terms and Conditions when making your reservation. Cancellations with a full refund are allowed up to 31 days or more prior to departure for USA and Canada tours, or up to 61 days or more prior to departure for international tours. No refund is allowed 30 days or less prior to departure for USA and Canada tours, or 60 days or less prior to departure for international tours.
If I am unable to use a portion of the tour, can I get a partial refund?
Unfortunately, due to vendor and supplier contracts, we are unable to provide partial refunds for unused portions of any tour or tour component.
Are Transfers included in the Itinerary?
Round-trip transfers from the airport or train station are normally included in our international tours. Transfers to the destination (for both international and domestic tours) are not included in the tour price. Please see the Sample Itinerary. If it mentions that transfers are included, then yes, transfers are included at no additional cost.
What meals and excursions are included in the tour?
The Sample Itinerary should be your reference. If the meal or excursion is described in the Sample Itinerary, then it is included at no additional charge. For those days where it expressly notes Free time, then any optional activities you elect to participate in might have an additional cost. In addition, if the itinerary states "evening on your own," it would imply that you have the opportunity to visit a restaurant of your own choosing, and at your own expense. If you have any question about inclusions, please submit an inquiry by clicking on the blue "Ask Us a Question" button under the price section.
Is it possible to book pre or post tours or stays through Edible Destinations?
Yes, we often do have optional 2 and 3 night excursions that are priced separately from the tour. We can also assist with pre and post night stays in a hotel if you choose to come in early before the tour starts, or stay on after a tour ends. The price of those hotel stays are not included in the price of the tour, but we would be happy to provide a quote. Simply ask your Culinary Travel Specialist, or submit an inquiry by clicking on the blue "Ask Us a Question" button.
Are Guide or Host Gratuities included in the price of the tour?
Since tipping guidelines and customs vary widely between countries, we do not include gratuities in the price of the tour. Your Culinary Travel Specialist can provide you with recommendations. But the general rule is to tip modestly when you are pleased with a guide’s services, either at the end of the tour, or at the conclusion of a specialty day excursion where you will only be with that guide (or chef) on that day.
Should we plan on any personal expenses during the tour?
All lodging, meals, transfers, classes and excursions mentioned in the Sample Itinerary and Vacation Highlights are included in the price of the tour. However, we highly recommend taking local currency for purchasing personal items, souvenirs, tipping, etc. You can either get the local currency at an airport exchange service, ATM or from your local bank prior to travel. However, you should note that many hosted destinations do not accept credit cards for personal purchases.
Do you recommend Travel Protection?
We recommend that you purchase a travel protection plan to help protect you and your travel investment against the unexpected. Travel protection plans can include coverage for Trip Cancellation, Trip Interruption, Emergency Medical and Emergency Evacuation/Repatriation, Trip Delay, Baggage Delay and more. Outstanding trip to Termoli on the Adriatic coast of Italy! The whole trip was well organized, from the initial booking to the final details right before leaving were handled by Chris in the Colorado Office promptly and courteously. The hotel Residenza Sveva, set in the heart of the old town, was delightful and gave our party of six friends the authentic experience of life in a small Italian seaside town. Maria Laura was an exceptional tour guide and took us to places we would never have discovered on our own and ensured our every need was met. The food was amazing, the wine flowed freely, the chefs and restaurant owners were characters and we felt like we were welcomed and celebrated. Overall I can not recommend this tour enough. If you like fresh Italian food and culture and are able bodied (there is quite a lot of walking and steps to navigate) take the Culinary Splendor tour of the Adriatic. You will not regret it.

Chuck and I loved our epicurean adventure in Termoli. Our guide MariaLaura was wonderful . . . gracious, welcoming, and very friendly. We benefitted from being a small group of 5, so all activities were more personal and free flowing. The Olive Mill, Vasto, and the two Agnone tours were very informative, but also provided a real experience of the culture and the special people and craftsmen. I appreciated that the tours were relatively close to Termoli, so we didn’t spend excessive time travelling to these locations. The cooking classes were a lot of fun and gave very personal guidance in making pasta and pizza. It was a fantastic trip and would highly recommend it to others.

My husband and I loved the culinary tour in the charming town of Termoli. Laura was a wonderful coordinator and she made sure that everything ran smoothly. Highlights of the trip included a day in Vasto with lunch on a trabocco, meeting wonderful people, visiting an olive oil producer, culinary classes, and going to Agnone to see a business that has been producing wonderful cheese since 1662. Our room was lovely and it overlooked the Adriatic Sea.

My husband and I found that the culinary tour to Termoli and stay at Residenza Sveva was beyond our greatest hopes. Our guide Laura was delightful, helpful,knowledgeable and charming, staff were wonderful, and site was gorgeous. Our room had a view of tiled red roofs and the green blue Adriatic Sea. With only 11 people in our group, we had the opportunity to make friends and have a very personal experience while we learned to cook fantastic meals and see and experience Molisa, which must be one of the little known treasures of Italy.

My friend Gini and I had a terrific culinary vacation in Termoli under the Old Abruzzo tour with fantastic guide/host Laura and the wonderful staff at Residenza Sveva and Restaurante Sveva. The chefs and wait staff at the culinary school/restaurant and the host Alessandro were so very welcoming and taught us a lot while having a really fun time! Memories were made! New family was established with our small nine person tour group which we hope to stay in close contact with. This was my once in a lifetime memory making trip! I will always remember Termoli and neighboring cities and excursions we enjoyed. Everyone was so welcoming and helpful and food was Fantastic!

We did the Old Abruzzi & Adriatic tour in Termoli, IT WAS FANTASTIC!!!!!! From beginning to end it was absolutely perfect. Every member of the staff was friendly, attentive and enthusiastic about teaching us the preparation techniques and food was amazing. The side trips to the olive farm, winery, trabocco, fish markets and more were well planned and complemented our classroom work. The Rezidenza Sevia was a perfect location, the facility and staff will be friends forever. Can not wait to do this again.
